The “1084 Blanc de Noirs” is a single-variety wine, Pinot Noir, only bottled in 1.5 litre magnum.
The grapes are manually harvested, only selecting ripe brunches that are transferred to the cellar, trying to maintain its integrity. Here the pressing takes place through a vertical press and is interrupted as soon as the grapes begin to release colouring substances.
Fermentation and refinement occur in French oak barriques. The bottling, always scheduled for the following Easter, is followed by the process that consists in disassembling the stack of bottles and reassembling it, until the disgorging.
